Shrimp Scampi

 
Ingredients:

1/4 cup olive oil

1 stick butter, melted

5 large cloves garlic, minced

1/4 tsp. freshly ground pepper

1/4+ tsp. oregano

1/2 tsp. basil

salt to taste

1 lb. shrimp, peeled & cleaned

breadcrumbs

     
Directions:  
  1. Place shrimp in baking dish  

  2. Mix first 7 ingredients together

  3. Pour over shrimp  

  4. Sprinkle breadcrumbs over mixture

  5. Cooking time: Bake at 350º for 5 minutes; Broil for 5 minutes

     
Notes:   Low fat? No. Although made with high fat ingredients, when accompanied by a low-fat salad, pasta and serve only a small amount of butter sauce and a few shrimp it can easily fit into a healthy nutritional program.
