Salmon in Puff Pastry

 
Ingredients:

Puff Pastry (Found in the frozen food section at your supermarket)

Salmon Filets cut in about 1 1/2 -2 inch width

Dill Sauce (see below)

 Ingredients for Low Fat Dill Sauce

1/4  cup reduced calorie mayo

1/2cup plain non-fat yogurt

1/4 cup fresh dill, finely chopped

1 T lemon juice

     
Directions:  

Dill sauce: Whisk all dill ingredients together. Chill overnight to enhance flavor.

 

Salmon:

 

Preheat oven according to pastry package directions. (350 degrees)

  1. Spray baking pan with Pam-olive oil spray.

  2. On a floured pastry board, roll out puff pastry squares as thin as possible enough to enlarge them so they will enfold the salmon when you wrap it. Flour rolling pin as well so it will not stick.

  3. Take one piece of rolled out pastry and liberally put a spread of dill sauce in the center (in the shape of the salmon slice.

  4. Place the slice of salmon in the center of the dill sauce on the dough and then apply more dill sauce to the top.

  5. Fold the dough over the salmon-envelope fashion (top, bottom, then sides)

  6. Place folded side down on baking pan. Repeat until finished.

  7. Spray top of pastry with Pam spray.

  8. Bake in oven about 25-35 minutes until lightly brown. DO NOT OVERBAKE or salmon will get dried out.

 

     
Notes:  

Heart Healthy Hint:  1tsp dried dill = 1 T, 4T = 1/4 cup

 

An excellent accompaniment is Couscous and fresh steamed string beans and carrots.
