Pesto Shrimp with Pasta

 
Ingredients:

1/2 pound medium-large shrimp (cleaned)

1 frozen package multi colored peppers (cooked according to package directions)

1 small can sliced black olives

1 package shell pasta to keep with the seafood theme (or pasta of your choice)

1/3 cup prepared pesto sauce

1/3 cup prepared Good Seasons salad dressing made with balsamic vinegar (or similar)

1/4 t fresh ground pepper (to taste)

1/2 t salt (or salt substitute) (to taste)

1/4 cup grated Romano cheese

1/4-1/3 cup reserved pasta water

     
Directions:  
  1. Prepare pasta according to package directions

  2. Prepare peppers according to package directions

  3. Cook shrimp in boiling water 2-3 minutes, rinse and set aside.

  4. in small bowl, blend pesto sauce, dressing and salt and pepper

  5. in large bowl place cooked pasta and pour mixture over pasta and toss until coated

  6. add olives and peppers, fold in

  7. Add shrimp, toss.

  8. Gradually add a little of the reserved pasta water to make sure it is not dry (pasta soaks up the liquid)

  9. Sprinkle with cheese

  10. Serve and enjoy  (can also be eaten room temperature or as a cold salad)

     
Notes:   Add a fresh salad with a light dressing & one glass of your favorite wine.
